We love summer and love the variety of ingredients available for lovely healthy treats. Here are a few from food photographer and writer Monir Ali.
In our house we just love tomatoes, well 3 out of the 4 of us. one of our favourite salads is the simple tomato salad, its so easy the girls make it all the time.
Take 1kg of a selection of tomatoes, we use a mix of cherry, beef and salad tomatoes. chop roughly and place in a bowl. add one clove of garlic finely chopped, grab a handful of coriander chop finely add to the bowl. This adds a touch of freshness to the flavour, juice of half a lemon salt to taste. then mix well. and serve. simple. for adults we usually add three birds eye chillies for a little kick.
We just coming to the end of the kasa Am ( Green Mango) season and hopefully the uncles at Asian Food Store and Medina Stores on Hatfield road will will have a few left.
Again another simple but tasty summer salad. Take as many green mangoes as you love. peell them. Now either using a potato peeler Finley slice the mango into strips mango on a plate, add a little salt, a little garlic, using your hands mix well and tahda.. done,
